The union of sweet, sour, and savory is essential to any properly balanced cocktail. As enthusiasts continue to look to history for modern inspiration, there is a new, old tradition of shrubs with a tangy appeal making their way back to the beverage scene. A shrub is a preserved solution of fruit and or botanicals, sugar and vinegar or alcohol. They offer big flavors in small doses and if you look closely you will see shrubs sprouting up on drink menus all around you.
